Season chicken with chili powder, cumin, garlic powder, and salt. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until charred and cooked through. Rest 5 minutes, then slice.
Stir lime juice and cilantro into the cooked rice.
Tip: Add the lime and cilantro while the rice is still warm. It absorbs the flavor better.
Warm black beans and corn in a small saucepan. Dice the avocado and toss with a squeeze of lime.
Assemble bowls: cilantro-lime rice, sliced chicken, black beans, corn, diced tomato, avocado, and a dollop of sour cream.
