Preheat oven to 425F. Mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
Place chicken thighs skin-side up in a baking dish. Pour the marinade over the chicken. Tuck lemon slices between the pieces. Pour broth around (not over) the chicken.
Roast for 40-45 minutes until the skin is deeply golden and crispy and internal temperature reaches 185F.
Tip: 185F for thighs, not 165F. Thighs taste better when cooked past the standard minimum. The collagen breaks down and they become more tender.
Let rest 5 minutes. Spoon the lemony pan juices over the chicken. Garnish with parsley. Serve with roasted potatoes or a simple salad.
