Separate and wash the lettuce leaves. Pat dry and arrange on a serving platter like cups.
Heat a large skillet over medium-high heat. Cook the turkey, breaking into small crumbles, for 5 minutes until browned.
Add ginger and garlic, cook 30 seconds. Stir in water chestnuts.
Mix soy sauce, rice vinegar, hoisin, sesame oil, and sriracha. Pour into the skillet and cook 2 minutes until sauce thickens slightly.
Tip: Taste the sauce before adding. Adjust soy for saltiness and sriracha for heat.
