Preheat oven to 425F. Bring water, butter, sugar, and salt to a boil. Remove from heat and add flour all at once. Stir vigorously until a smooth dough forms and pulls away from the sides.

Let cool 3 minutes, then beat in eggs one at a time until smooth, shiny, and thick enough to hold a V-shape when the spoon is lifted.

Tip: The dough should be glossy and hold its shape when piped. If it's too stiff, beat an extra half-egg in.

Pipe or spoon 16 mounds onto a parchment-lined baking sheet. Bake at 425F for 10 minutes, reduce to 375F, and bake 18-20 more minutes until golden and hollow-sounding. Pierce each puff with a skewer to release steam. Cool completely.

Heat cream and pour over chopped chocolate. Stir until smooth. Split the puffs, fill with ice cream, and drizzle generously with warm chocolate sauce.
