Whisk flour, dashi, and eggs into a thick batter. Fold in the shredded cabbage and green onions. The batter should barely hold the cabbage together.

Heat oil in a large non-stick skillet over medium heat. Pour half the batter into the pan and shape into a round disc about 1-inch thick. Lay 2 slices of bacon on top.

Cook for 4-5 minutes until the bottom is golden. Flip carefully (use a plate to help). Cook another 4-5 minutes until cooked through.

Tip: Don't press down on the pancake. You want it thick and fluffy, not flat. Be patient with the flip. If it's not golden enough on the bottom, it's not ready to flip.

Top with okonomiyaki sauce, mayo (drizzled in zigzag lines), bonito flakes, and nori. The bonito flakes will dance from the heat. Serve immediately.
