Whisk together soy sauce, mirin, sake, brown sugar, garlic, ginger, and cornstarch in a bowl. Set aside.
Heat vegetable oil in a large skillet over medium-high heat. Add chicken thighs and cook for 5-6 minutes per side until golden and cooked through. Remove to a plate.
Pour the sauce into the skillet and bring to a simmer. Cook for 2-3 minutes until thickened and glossy.
Tip: The sauce thickens quickly once it starts bubbling. Keep stirring to prevent burning.
Return chicken to the skillet and turn to coat in the glaze. Cook 1 minute more. Slice the chicken and serve over steamed rice, spooning extra sauce on top. Garnish with sesame seeds and green onions.
