Start the apple sauce: melt butter in a saucepan over medium heat. Add diced apples, brown sugar, cinnamon, and water. Cover and cook for 15 minutes, stirring occasionally, until apples are soft. Mash to desired consistency.
While sauce cooks, pat pork chops dry and season generously with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 4-5 minutes per side until golden brown and internal temperature reaches 145F.
Tip: Let the chops rest for 5 minutes after cooking. The temperature will rise another 5 degrees and the juices redistribute.
Serve the pork chops with a generous spoonful of warm apple sauce and fresh thyme sprigs.
